Here are some recipes that I'm thinking about trying:
- Parsnip gnocchi
- Shaved parsnip salad with grapefruit (I'd have to modify this, as the husband doesn't like grapefruit, but I've not tried raw parsnips before)
- Roasted parsnips and carrots (I also have a lot of carrots in the fridge)
- Roasted parsnips and apples (ditto for apples)
- Spiced parsnip cupcakes (parsnips worked well in biscuits, so why not cupcakes?)
- Parsnip chips (I made these a year or so ago, using olive oil and different spices - not sure why I haven't made them since, as we enjoyed them)
