Thinking about parsnips

I have quite an accumulation of parsnips in my fridge.  While we already have a few ways that we like to eat the parsnips (oven-baked parsnip fries, parsnip biscuits, and parsnip puree), I'm looking for new ways to cook them. 

Here are some recipes that I'm thinking about trying:

• Parsnip gnocchi
• Shaved parsnip salad with grapefruit (I'd have to modify this, as the husband doesn't like grapefruit, but I've not tried raw parsnips before)
• Roasted parsnips and carrots (I also have a lot of carrots in the fridge)
• Roasted parsnips and apples (ditto for apples)
• Spiced parsnip cupcakes (parsnips worked well in biscuits, so why not cupcakes?)
• Parsnip chips (I made these a year or so ago, using olive oil and different spices - not sure why I haven't made them since, as we enjoyed them)
