Baking Bites posted about avocado on toast. I have made this in the past as well, but always mashed the avocado with a fork, then added salt and olive oil. The slices used in the post are much prettier.
Miso quinoa pilaf with grilled cucumber, eggplant and soy dressing from Food52. I am intrigued about the idea of grilling a cucumber, as it's something I've never tried (or thought to try).

- How to make marshmallow fondant, colored (and flavored) with Jell-O. I haven't used fondant with cakes before, but after seeing this recipe, I've been thinking that it might be fun to make two colors, then make flowers to decorate cupcakes with the fondant (one color for the petals, another for the center; inverting them on half of the cupcakes).
